(Serves 4)
1 cup quinoa (white, red, or tri-color)
1 cup water or broth (1:1 ratio keeps it fluffy, not mushy)
Pinch of salt (optional)
1 tsp olive oil or butter (optional – prevents sticking and adds flavor)
Rinse the quinoa thoroughly in a mesh strainer under cold water to remove the natural saponins.
Add quinoa, water (or broth), salt, and oil to the Instant Pot.
Lock the lid, set the valve to Sealing.
Select Pressure Cook (or Manual) on High Pressure.
Set the timer to 1 minute.
After cooking, let it naturally release for 10 minutes.
Carefully release any remaining pressure manually.
Fluff with a fork and serve!
